To do that, with the Bridge tool selected, click the first edge and then click on the second one. If your geometry is clean, you should get instantly a new poly. This operation will take a bit to complete and you have to be extra careful to not miss any edges.
Sometimes it's easier to select the edges from below so make sure you do that. It's well worth the work.
